Description

Cherries are picked and dried whole before hulling either by the smallholder at home or at a dry mill.

The focus the is applied on further processing and cleaning the beans, using a mixture of equipment for either the dried green beans or cherry.

Once cleaned and sorted, the hulled green beans will enter a ‘mixer’ or chamber with agitation where a small amount of steam or hot water is applied to create friction with the silver skin so that it is rubbed off as it goes round. This small amount of friction none the less generates a little heat, and this in turn drives off the residual moisture that had been applied.

The dry, slightly shiny bean is then bagged and stored ready for shipment.
