Caramel, honey, tobacco. Tea-like.
The Ea Tan Cooperative are based in Đắk Lắk, an inland province of Vietnam amongst the central highland area. Vietnam is the worlds second largest coffee grower and the vast majority of that is Robusta. This however, is Arabica. Ea Tan have been farming since 1990 when the government suggested this would be a good way for them to improve their income, not long after the 1986 switch when the country made a concerted effort to produce coffee.
156 farmers are involved in the cooperative, covering 73 hectares in total.
Cherry is picked when at around 20 Brix. Cherries picked are processed the same day, with a pulper removing teh mucilage and skin, followed by a wet fermentation for 1-2 days. Parchment is then washed a further 2-3 times to make sure it is scrupulously clean before being dried on raised beds under the sun for approximately 20 days.
