Description

Coffee is picked by hand and then fully washed.

Cherries are cleaned and the flesh removed before undergoing a light fermentation to remove the rest of the mucilage.

Following another washing beans are dried using guardiolas to maximise a quick drying time with accurate control over final moisture in the bean.
