Choc, apple, sugar cane, lime.
70% (roughly) of the coffee is processed on the individual farms where it is grown before being delivered to the co-op.
30% is delivered as cherry for processing at the co-operatives’ own wet mill.
After transport to the dry mill and being prepared for export there, coffee is shipped to Vancouver for decaffeination.
Beans are then introduced to the proprietary green coffee extract, that enables the caffeine to be removed whilst reducing the opportunity for other flavour volatiles to be extracted too.
