Description

Coffee is grown under shade, ripened cherries picked and taken to flotation tanks that day for initial sorting of twigs, leaves and floaters.

Fermentation tanks hold the cherries for between 12-16 hours.

They are then washed again and dried on solar dryers in barns.

Shipped to Vancouver for processing, the team at Swiss Water gently soak the green beans to extract the caffeine which is then removed from the green coffee extract by filtration.

The extract and beans are reintroduced to each other, and dried back to standard levels.
