Sumatra Wahana P88

Cupping notes

Melon, lemongrass, orange, basil, toffee.

Description

Known as ‘dry hulled’ in comparison to the expected Giling Basah or ‘wet hulled’ process, cherries are picked and follow expected steps for a washed coffee.

Red cherries are delivered to the on-estate processing site where they are washed and sorted before being pulped.

A fermentation occurs for 12 hours to remove the remaining mucilage.

Parchment coffee is then dried for 7 days, using a mix of covered patios and mechanical driers to finish, depending on space and weather.

P88 formed part of a varietal trial from the Dutch in the 1980’s and traces it’s roots to a Colombia catimor via Thailand and Kenya.
