Cherries are collected during the day when fully ripe and brought to the central collection centre for onward transport.
Arriving at Kinini by 4pm in order for processing that day, cherries are washed and floated, to remove any of low density.
The clean cherry is then fermented whole for 24 hours before being pulped, fermented, and washed again.
The beans make their way to the raised drying beds via water density channels after undergoing a 24 hour soak in fresh clean water.
