Gooseberry, peach, apple, chocolate, caramel.
Java cherries are selected based on sugar content – between 18–23° Brix.
They will then spend a period of 12 hours in water tanks before being floated and washed.
Cherries are pulped, and the beans packed in to bags before being taken to the drying tables.
A thin layer is spread on to screens on a raised framework under shade.
Constant turning lasts for 25-30 days until moisture has reduced to 11%.
30 to 45 days rest allows the beans to stabilise before being drymilled and sorted.
