Blueberry, cherry, lavender, lychee, pineapple.
Cherries are selectively picked at 18 – 23° Brix.
Whole cherries are then soaked for 12 hours, both for cleaning and allowing density stabilization.
Initial drying is done under shade, with five turning cycles in the first 24 hours.
Secondary drying maintains the shade but increases the agitation to every 2 hours for 7-14 days.
Final drying reduces agitation, and extends the total drying time to 27 days .
