Raspberry, pear, toffee, plum, apple, lime.
Coffee is picked, and cherries with a Brix of between 18 – 23° are selected.
Cherries are then held in water tanks for 12 hours, before being washed and floated.
Pulped beans are placed in GrainPro bags and sealed with a one way valve for a 72 hour anaerobic fermentation underwater.
After a final washing, slow drying occurs in solar parabolic dryers for up to 25 days, reaching 10.5 – 11.5% moisture.
Resting and milling is further followed up with hand sorting before shipment.
