Chocolate, plum, almond and just a hint of apricot.
Cherry here is produced in the methods traditional to Peru. Picked and pulped, then fermented in small washing stations on the farm.
Parchment is dried under the sun, using a mix of rooftops, patios or tarpaulin laid on the ground.
This is changing to see more parabolic drying facilities and raised beds which is improving the quality in the cup.
