Myanmar Ywangan Natural CR95

Nectarine, raisin, berries, maple syrup.

Description

Cherries are brought to the centralised wet and dry mills, where there is ready availability of raised beds and staff to clean and sort the cherry.

First floaters are removed before beans are handpicked and then fermented for 18 to 24 hours in tanks with no water.

Cherries are then moved to raised beds for drying.

Drying cherries are raked hourly throughout the day, and dry under the sun. At night they are covered to protect from moisture.
