Strawberry, watermelon, red vermouth, mango, caramelized berries.

Description

Ripe cherries are tank dried (as opposed to aerobic fermentation in buckets) for between 18 and 24 hours.

Raised beds provide the first stage of drying for 48 hours under sun. here they are turned every two hours.

Semi-dried cherries are then finished on patios, and turned 3-4 times a day.
