Cherries are picked from individual blocks on the farm.

Selectively harvested fully ripe cherries are sent to the wet mill to remove floaters then skin is removed within 20 hours after harvest.

Small wooden beds house the beans covered in mucilage as they dry under the sun.

Beds are attended 5-10 times per day to ensure evenness in drying.
