Cherries are picked ripe and delivered to a centralised collection point in their area, where they are taken quickly to the Kinini washing station at the foot of the hills.

Here they are meticulously logged, before a flotation to remove and control the quality of the coffee to be processed.

For this lot, the precise details have been asked to be kept secret, but it involves the innovative use of local crossover technology.

This allows the beans to be processed in an alternative but anaerobically similar method.
