Description

Cherries are picked deep red, and delivered to a centralised point near the many smallholders farms.

Here, regular trucks take the coffee immediately to Kinini washing station for processing. It must reach the station by 4pm on the day of picking at the very latest.

Cherries are cleaned and quickly sorted before undergoing an anaerobic fermentation in individual bags.

Once complete, cherries are spread to dry on raised beds, with shade provided at peak hours of sun to protect from the heat and allow a more controlled process.
