Description
Cherry is picked fully ripe, and floated to remove any defective beans.
Spread thinly on patios it dries under the sun before drymilling.
Delivered to the warehouse it is graded and sorted before ‘curing’ – the name given to resting the coffee in India before it is ready to ship.
Before bagging, the coffee undergoes another level of sorting to remove any pale beans.
