Raxidi start with selectively picking ripe red cherries with a high Brix.
A post-picking manual & mechanical sorting and garbling remove twigs, leaves, floaters, and other extraneous matters so the very best fruits are separated. These are then pulped and slowly fermented with freeze-dried in-house yeast.
The yeast used & the slow drying brings out a lot of fruitiness in the coffee.
