Description

Coffee cherry here is collected when deep crimson, as is taught by the agronomists covering training.

It is delivered to a central collection point in the village, where it is trucked to a central processing unit owned by the cooperative.

Here, the Brix level is checked before a clean and floatation separation.

Cherries are then dried on raised beds for 15 – 25 days.
