Description

Cherries on Korra Seethanna’s small farm are picked when crimson red.

They are sorted on the farm before being delivered to a truck from the cooperative SAMTFMACS, that will take the cherry to the central processing unit.

Cherries are checked for Brix level before washing and floating, and then lightly pulped.

The beans and mucilage left are taken to raised beds where they dry for 8 to 15 days.

Once dry, the honey coffees are hulled and polished, to remove any silver skin remaining.
