Cupping notes

Gooseberry, pineapple, cherry liqueur, red wine, cardamom.

Description

Cherries are picked at a very dark red colour. These are separated from the lighter reds at the farm, before being delivered to the village where a truck collects the harvest.

The Central Processing Unit (a wet mill) receives the cherry and measures the Brix to confirm over 20 degrees before floating to check on density.

Cherry is then dried on raised beds for 15-25 days until the humidity is between 10 and 11.5%.

Dried cherry is then hulled, colour sorted via machine, and lastly hand sorted and inspected.
