Description

Coffee cherries are picked at a very dark red colour. These are separated from the lighter reds at the farm, before being delivered to the village where a truck collects the harvest.

Cherry is received by the Central Processing Unit where they measure the Brix before floating to check on density.

The cherry was then dried for 21 days until the moisture was 10%.

Dried cherry is then hulled, colour sorted via machine, and lastly hand sorted and inspected.
