Honduras COMSA Washed

Cupping notes

Choc, plum, hazlenut, brown sugar.

Description

Coffee is picked on when 100% ripe.

It is placed in barrels with water for up to 48 hours, helping a greater selection of cherry.

Pulped without water, this reduces consumption and helps protect the environment.

Pulped beans are left for a maximum of 12 hours (depending on the climate) so that the mucilage separates from the parchment.

It is then washed, again with a minimum amount of water, before being dried in a solar drier.

The first days it moves every 15 or 20 minutes, then it is done every half hour.

The process can take up to 21 days, depending on the weather
