Strawberry, red apple, dried apricot.
Located in the village of Chichimes, San Pedro Necta, Huehuetenango, the weather holds cool and moderate breezes are ideal for the cultivation of coffee. Founded in the 1960’s by Mr. Octavio Rafael Herrera Ordóñez, he tilled it for 25 years until his retirement. It’s currently under the administration and operation of the second and third generations, with more than 50 years of experience in coffee cultivation, improved methods of processing coffee, allowing plantations to provide its best attributes.
Varietals grown across the 90 hectares that are cultivated are Bourbon, Catuai, Typica, and Caturra, and this lot comprises a mixture of them all. They prosper under the various shade trees of Gravilea, Cushin and Chalun. Shading allows a slower maturation and proper development of the coffee plants and beans.
Awareness in environmental protection, developing production techniques that protect the natural wildlife of the region, the farm uses dried leaves, coffee pulp and organic sheep manure as fertilizer.
Coffee is wet processed in the traditional matter, and dries on concrete patios under the sun.
