Description

Cherries are collected ripe from the many smallholders or estates in the immediate surroundings of Antigua city.

Brought to Volcanes’ Beneficio La Esperanza they are first washed and sorted before undergoing a pulping to remove the mucilage.

Fermentation is strictly controlled using temperature probes to monitor temperature.

Parchment coffee is then washed and taken the short distance to the concrete patios.

Here a dedicated team lay it out under the sun and constantly monitor it as it dries.

It is piled and covered to ensure it does not overheat, and raked to allow even moisture dispersal.
