Description

Cherries are picked from the Caturra and Bourbon trees, and washed to remove any floaters, leaves or twigs.

Passing through the pulper, the parchment coffee is fermented for thirty hours, and washed with fresh spring water.

Beans are then dried on a flat concrete patio under the sun.
