Chocolate, peach, plum, apple.
Las Cipresada is situated in La Libertad, close to the Mexican border. It has been in the Castillo family for 60 years, currently under the expert eye of Nohelio Castillo who inherited it from his father, Carlos. He lives on the farm with his wife and their 4 sons.
Growing a mix of Bourbon, Caturra, Sarchimor and the less common San Ramon they produce around 600 quintals of coffee from the farm and some annexes that they have around the village.
San Ramon is a Guatemalan dwarf varietal, forming part of the Typica family, said to be more disease resistant, but with a lower yield. Sarchimors stem from a crossing of Villa Sarchi, commonly found in Guatemala and Hybrido de Timor, the infamous natural hybrid of Canephora and Arabica. They are more commonly considered as a family, and have been very useful in many more modern breeding programs.
Coffee for this lot spends between 32 and 42 hours in fermentation before being patio dried for 14 days.
