Sweet Berry is a classic Sidamo-style natural with a built in premium that the exporter uses to build wells in producer villages. This either improves or provides access to clean water, and is currently from Idido village.
Cherries are harvested and picked individually by hand. Pickers rotate among trees every eight to ten days, choosing only the cherries that are a deep red colour.
Coffee cherries are sorted by immersion in water. Bad or unripe fruit will float and the good ripe fruit will sink. The skin of the cherry and some of the pulp is removed and teh remainder is fermented in tanks and washed to leave a clean bean. Beans are then sundried on raised beds.
