Picked and brought daily to the washing station where it is fermented for 36 to 48 hours depending on the weather.
Washed and cleaned, parchment coffee is laid out on raised beds and raked permanently, to ensure drying is even and no damp pockets occur.
Solely dried under the sun, it takes on average 12-15 days before the coffee is correctly dried. During this time, it will be covered with a fine mesh between midday and 3pm in order to protect from the sun when its heat is at its most intense.
