Ethiopia Nansebo Natural

Description

Ripe cherry takes between 15 to 21 days here to dry, on raised beds so familiar int eh Ethiopian coffee landscape.

Cherries must be consistently but carefully raked. They need to be moved to ensure even drying, but gently enough to not damage the cherry, especially at higher moisture levels.

Temperatures are on average 20-23°C, but still cherries are protected from the midday sun by a light covering between 12 and 3.
