Depulping, which separates the cherry’s skin and pulp from the beans, is done carefully to prevent damage or fermentation issues.
Fermentation is controlled using 10 standardised tanks to develop clean flavour profiles without off-notes.
Beans are washed to remove any remaining mucilage and then soaked in clean water.
Drying takes place across 215 raised beds under monitored conditions to ensure consistency and prevent moisture-related defects.
