Description

Cherry is received at two main sites, the biggest facility being in Shara village.

Cherry is floated and cleaned before being pulped on site.

The parchment coffee will have a 36-72 hour wet ferment before final cleaning.

Clean coffee is then spread on dedicated raised tables from over 400 available.

Maintaining different tables to each process helps to maintain flavour clarity and consistency.

The beans will take 7 – 15 days to dry under the sun, depending on the exact weather conditions.
