Description

Picked from under the shade canopy, the coffee is depulped and sent to fermentation tanks.

Cherries will rest between 8 to 12 hours commonly while the fermentation stage progresses.

Beans in parchment are then washed and sent to clay brick patios for 8 days.

In the first three days it is moved every 15 minutes and then from the fourth day it is moved every hour.

Overnight the coffee is covered to avoid any moisture from dew.
