Description

Los Nogales is the first farm that the Salaverria family, founders of JASAL, bought. It is also the name of a long running project we have joined with them in doing, allowing for experimentation on processing and varietals. This year, the Los Nogales natural processed lot is a larger lot from across the farm, rather than a specific tablon.

Cherries are collected from across the farm when fully ripe, then dried on tiled patios at the Beneficio Los Cruces for 20 to 25 days.
