Syrupy and extremely sweet. Orange, mango, guava, papaya and whisky.
This El Salvador microlot is from Finca Los Nogales.
Miramar is the highest plot of the farm, and grows Hybrido de San Francisco (HSF), and Catuai.
This year, the fermentation has moved from bags to tanks, and the fermentation hours increased from 80 to 96. Soaking last year produced a more speckled coffee – this year soaking was duplicated, adding to the syrupy clarity and homogenizing the appearance of the green better.
