Cherry is collected at roadside collection centres before being delivered to CoopeTarrazu’s processing centre in San Marcos.
Here the cherry is washed and cleaned before undergoing a pulping to remove the flesh.
This is most commonly by decmucilager – a machine that utilises centrifugal force, pressured water, and a rough cylinder to remove the flesh entirely.
Parchment coffee is then pre-dried initially, followed by a slower, more controlled drying in Guardiolas.
