Cherries are picked only when deep red, with sugar levels recording between 18 and 20 degrees Brix.
Delivered to a separate collection area at the Coope Dota mill, the lots are kept separate to maintain traceability.
Cherries are washed and floated before a mechanical pulping that leaves 5-10% of the mucilage intact.
Parchment coffee is then dried on beds in the greenhouse, protected from any rains and with everything carefully controlled until moisture is 10-11%.
