Costa Rica Don Senel Cola Roja

Description

This coffee is produced using the ‘natural macerdao’ process developed by Don Senel Speciality Coffee.

Cherries are handpicked very ripe, and deep red; degrees Brix is measured to guide the precise time to pick, reading at least 25° for this process.

Taken to their own micromill, the cherries undergo a quick clean and additional sorting before being placed on raised beds.

For 2-3 days the cherries are turned regularly to reduce initial moisture whilst ensuring an evenness of the process.

Cherries are then sealed in tanks for a further fermentation process, generating their own carbon dioxide.

The target is an end pH level as indicator of when the coffee is ready, usually this takes 6 days.

The resultant coffee is then dried on raised beds under 30°C for around 38 days.
