Peach, cranberry, milk chocolate, white sugar.

Description

Centroamericano cherries, now entering their 4th year of growth on the farm are picked and rested.

This is essentially a dry fermentation for 34 hours in barrels, before being pulped.

Once pulped, cherries are remixed with the skins and mucilage.

It is dried for 7 days on patios before cleaning and moving to guardiolas for the final drying.
