Sudan Rume is an unusual varietal exhibiting unusual mentholated characteristics in the cup with fresh ginger strongly at the fore. No wonder this has been used to win national competitions.
Available both as natural and washed, the washed is picked, carefully sorted and pulped without water before being placed in a fermentation tank for between 19 and 22 hours. The coffee is tasted during this time to determine the exact time to give the desired cup profile. Once ready, the coffee is mechanically dried to keep consistency.
Sudan Rume is a landrace varietal, originally noted in 1942 in the Sudanese highlands.
