Cupping notes

Red grape, cherry, orange, peach, plum, chocolate.

Description

Coffees across the reserve are washed, de-pulped, fermented, washed again and dried at the farm.

Drying is done on parabolic driers and patios under the sun.

The farmers deliver their parchment to the local collection warehouse where it is weighed and recorded before being received in to CENCOIC’s warehouse in Popayan.

There it is cupped and then dry milled for export.
