Description

Ripe cherry on Davier Matomas’ farm Las Brisas, is harvested, floated to remove immature beans, and cleaned, before the cherry is left to rest for 12 hours.

Dry pulping then occurs with a fermentation for 86 hours, drying for 13 days, stabilization for 10 days and subsequent sale to ASOPEP for export.
