Cherry Selection: Cherries are handpicked at peak ripeness and sorted via flotation. Sweetness levels are measured to ensure uniform fermentation readiness.
Fermentation: After gentle pulping, cherries undergo a 72-hour aerobic fermentation. This stage enhances clarity and preserves delicate flavour compounds.
Washing: Mucilage is washed off post-fermentation, allowing clean flavour expression.
Drying and Stabilisation: Beans are dried in mechanical driers at 38 °C over 3–5 days. Final storage occurs at 18–19 °C in climate-controlled warehouses to preserve freshness and structure.
