Colombia Camilo Enciso

Cupping notes

Strawberry, tangerine, caramel, white chocolate

Description

This microlot is from the founder of ASOPEP, Camilo Enciso, and is just 175kg.

Beans on the farm are collected by variety, in this case Geisha, before processing. It is ‘rafted’ (sieved) to remove dry beans and branches before being rested and dry pulped after 24 hours.

The pulped beans are then stored in grainpro bags for 144 hours, a single rinse is made with very little water, and it is passed to canopies for drying for 15 to 20 days.
