Tabi is from Potosi, where they have 4.7hectares of if growing. They hybrid washed process is very similar to the Kenyan – cherry is fermented whole for 24 hours before being pulped and tank fermented, then washed and soaked before mechanical drying.
Tabi is a coffee variety developed by Cenicafe, the research lab of the federation of Coffee growers in Colombia around the year 2000 with some crossing (breeding) studies between Timor hybrid, Bourbon and Typica. The results were positive guaranteeing farmers resistances of the coffee leaf rust disease and a cup of quality with and extra value in specialty coffee. The word Tabi means “good ” in Guambiano (native Colombians) dialect.
