Description

Cherry Selection: Cherries are picked at precise ripeness and floated to isolate the densest, most flavour-rich fruit. Brix readings are taken to assess sugar concentration before fermentation.

Fermentation: A single-stage aerobic fermentation is carried out in open tanks for 72 hours, promoting flavour development and aromatic depth.

Washing: No washing is applied, as this is a natural process. The mucilage remains intact, contributing to body and texture.

Drying and Stabilisation: Cherries are dried in mechanical dryers at a steady 38 °C for 8–12 days. They are then stored in climate-controlled warehouses at 18–19 °C to maintain freshness and preserve aromatic integrity.
