Chocolate, cherry, walnut. Creamy.

Description

Cherries here are mostly machine picked.

On this well managed farm the typical field is picked with 70% of cherries at the ripe stage, the rest are raisins or under-ripes.

The yield is split in to 5 separations of ripeness, before the selected cherries are spread in a thin layer on patios to sun dry.

After 2 days on patios, cherries are moved to mechanical driers.

Here they undergo a controlled process of resting and agitating under heat until fully dry.

Beans are rested in parchment, in wooden lined silos until ready for sending to the warehouses at SMC, when they are dry milled.
